Yes they do require a well, bigger will use water faster during the grow period, if the well runs dry it stops growing/grows backward. Normal ETA once planting is complete is around 6 months, maybe 5000 water for a large forest, plan accordingly.
Wood from each type roughly corresponds to what you would get from a similar level public forest.
I put the acorns down as required when doing the building so it's clear how many are needed up front, the planting period doesn't require any other materials.
Like the well it will eventually run out of trees and need to be replanted.
Enough that once you chop them all you should end up with somewhat more than half the acorns needed for another forest of the same size (acorn drop rates are about the same there as the public spots)
