Harvesting Timer
The base time for harvesting at Level 1 is 50s. This reduces by 1s on every even level (i.e, 49s at Level 2, 48s at Level 4 and so on), for crops up until garlic and higher, when the base timer is raised. At base time, filling bottles is 5s faster than harvesting crops, which is 5s faster than milling sugar, which is 5s faster than planting crops. (Not quite right, at level 33, base timer is 33, not 34) Pathos

A crowding penalty is added to the base timer for each extra person working in the same place, up to a maximum of 20 others.

Double pickings
Once your harvesting level is high enough, there is a chance of picking two crops in a single attempt. It's not clear exactly what harvesting level is required. It also depends on the level of the crop. It seems that you need to be a certain number of levels above the minimum picking level for that crop.
This only occurs in guild greenhouses and it will still take the same number of actions and amount of time to clear the gh. Also, the chance of getting double picks increases with increasing level over that required to pick the crop.
Edit by Widdie: Level appears to be crop plant level +31 ie level 51 for Penos, 56 for green peppers. Double picks does not decrease greenhouse clearing time, you do gain extra crops though. If you harvest say a 1k mushrooms alone at high level, you will still gain 10 000xp, but end you with say 1300 mushrooms.
Brineweed: I harvested 1001 wheat at level 49, but no double pickings.

As a result you will get 1
Bottle of Water for 5 harvesting experience. Which replenishes 1 HP and destroys the bottle. It is generally more used in several
Cooking recipes. If used during cooking there is a chance to salvage the empty bottle.
You can buy empty bottles from other players or at the
Traders Shop at
Port Baron. You need to have finished the second trading quest (Forgot the ingredients?) to gain access to the shop. Empty bottles can also be crafted using
glass at crafting lvl 15.
Flour Mill: At level 10 you may grind 2
Bundle of Wheat into 1
Flour.
You can also build a Guild Flour Mill to do so in your compound at guild lvl 14.

Greenhouse: You need Harvesting Level 25 to be able to see this greenhouse and pick in it.
Kudzum
Greenhouse: The public greenhouse in Kudzum can grow all the crops above the 'normal crops' that require level 0. NOTE: Requires 1 level above the normal level requirement.

Harvesting yields 2 extra skill xp per pick.
Guild Greenhouse
To start, someone with build permissions selects which crop will be grown this rotation. The planters need samples of the crop to get seeds/cuttings from, but the harvesters will get back more than was planted. A certain amount of time is available for planting crops (about
6–12 hours, depending on crop, starting from when the crop type is selected), after which they will start growing automatically. The greenhouse holds up to it's specified size of crops when grown, it will stop you from planting more than is necessary to get that number. The amount of crops yielded will depend on number of seeds planted, following the growth factor as shown below. There is then a growing period where nothing can be done, this length is also different depending on the specific crop, but will be at least 24 hours. Then comes the harvesting, which works similar to the Unopos Mesa greenhouse. If the greenhouse is not cleared within about 6 hours, the crops will start to rot and you will end up with a smaller harvest. When everything has been harvested it goes back to the initial state and you can choose another crop to grow. Some rot calculations are

The time that planting is started determines when the crop will be ready, with a certain amount of time at the beginning when you can plant seeds. The growing times are shortened somewhat during winter to make up for a slower pace of random harvests. The onset of winter is calculated globally based on average temperatures, with a certain amount of hysteresis built in. (This paragraph is based on info posted by mskwik).
Note: After discussion with pibird, guilds turn over individually based on town temperature still.
The number of crops that can be planted is rounded up, e.g., in a greenhouse of size 750, planting wheat, 750/4 = 187.5 but 188 can be planted. In addition one extra crop is always added to the harvest, so in this case there will be 188*4 + 1 = 753 available for harvest. If a greenhouse is initiated, but nothing planted, the 1 extra crop will still be available for harvest. This gives a way to generate a planting stock from nothing, although it will take several growing cycles to fill the greenhouse.
The growing stage always finishes at a round 5 minute number. E.g., after initialising a crop of mushrooms in winter at 15:51, a 24 hour crop, they will be ready the next day at 15:55.
The growth times provided are only an estimate provided to give you a general idea on what to expect. It is suggested that if you have a guild greenhouse, to time the crops yourself and put your results in your forum.
There are two growing seasons. The Winter season is shortened to make up for the lack of drops at the woodcutting sites.
To plant Garlic, Black Pepper and Sage you will need to fertilize the soil using Plant Food. 1 Plant Food per crop planted. You also need to have completed the relevant training quest from the Royal Botanical Society at Port Baron. Citizenships required to complete the quests are Faldorian for garlic, Erfdarian for black pepper, and Odtoni for sage.
Note: whilst 2,800 greenhouses can be built, it appears that they cannot be planted
Planting Crops
Some of things that produce farmers do can help you in planting your crops. Produce farmers figure out how to time their produce harvests as much as possible so they only have to focus on one crop at a time. Sometimes this can not be helped. Normally they plant sweet corn then lettuce and tomatoes so that the lettuce comes in before the corn, but the tomatoes come in all season long so they have to do those with other crops. But if you plant intelligently you can avoid having 5 greenhouses come in at the same time.

Guild Forest
It takes 6 months for the trees to grow after planting them. No materials are required while planting as acorns are added beforehand during construction.
Acorns can be found while planting the forest or chopping the trees.
A medium forest has about 2000 planting slots (= 2000 trees and about 50k logs).
Note from unforgivenknight: I believe the above information is incorrect, a medium forest will get more like 20k-40k trees. maybe a typo.
My guess is " I think it is planting spaces * 10 = amount of trees (with a few randoms added in) i think" so with this theory, large forests have around 80
00–12000 planting spaces.

Random Harvests
Harvests will appear at random times at random locations. The level requirements to be able to see/harvest them are also random, usually up to 5 levels higher or lower than normal but can range up to 10 levels above or below as well. You will see a new option appear in town, something along the lines of Pick, Collect, Gather or Harvest.

Hardwood Logs! 10 Gathering XP/5 Character XP
Mushrooms and
Potatoes tend to appear only when it's raining in an area.
Nightshade Leaves can be picked during random harvests but not planted in greenhouses. All other crops that can be planted have appeared as random harvests before.

Rose Colored Glasses.
